Usually Kara II, and usually fewer boxes than people expect. It covers that room at 142 dB at one meter and flies from points a hotel ballroom will actually give you. K2 comes in when the room is a theatre or the program is a band.
There is no single figure. Coverage depth comes from box count, array curvature and the SPL you need at the back row, which is why a spec starts with the room and not the box. L-Acoustics publishes horizontal coverage per box and declines to publish a vertical figure, for the same reason.
To keep the low end off the back wall. A standard sub array radiates behind itself as well as forward, and in a ballroom that energy comes back at the stage. Cardioid gives up some forward output to cancel the rear, which is the right trade in a room with hard surfaces behind the band.
